I realize that this is an old post, but the OP was specifically asking about CarPlay. You can adjust the NAV voice by changing the radio volume control while the CarPlay nav voice is speaking. (Apple Maps, Waze, Google Maps, etc..) You can do this with the volume knob, or the steering wheel volume controls.
